Weekend bound!

Soooooooooo happy it’s Friday! Who’s with me??? This week has been filled. I mean to the rim. I am super excited for this weekend – my Mom is going to be here. It’s Paleo makeover 2011 up in this joint! I have her Paleo Comfort foods cookbook sitting on her bed. She’s even looking forward to the makeover… miracles do happen! Well with this Friday – I leave you with an oldie but a goodie!! Regular sized Laurie this is for you. Sorry it took me so long to post it!

Winter Squash Chicken Soup
Crockpot a whole chicken – 4 hours on high
stuff skin with fresh rosemary and 3 cloves of garlic
rub olive oil over skin
salt and pepper

1 butternut squash
1 acorn squash
2 large zucchini
Mix in a large bowl with olive oil, salt/pepper and 3 cloves of rough chopped garlic. Place on roasting pan and roast for about 20-30 minutes.

Place in food processor and puree. Pour in a large soup pot and add 2 cups of chicken stock (liquid from crockpot)

Add the following ingredients to the soup:
1 can coconut milk
1 tbls of cumin
1 tsp of coriander
Juice of 1 lemon
Add to taste:
smoked paprika
cayenne pepper
salt and pepper

Pull apart white and dark meat of the chicken. Place in the pot and stir well. SImmer on low heat for about 30-40 minutes. Stir often as to not burn the bottom.
