Secret Tuna

My husband does not like seafood. Which, I would like to say, I didn’t know before we got married. Because how could I, how would I marry someone who doesn’t like seafood? He’s lucky to be funny, cute, charming and… ok… enough of that. However, an odd occurrence has happened during the Whole30 challenge. He has agreed to eat fish at least once per week – he’s going to learn to like it. WOOT WOOT!!! This week, they were out of all the mild-enough-that-you-can’t-tell-it’s-fish at the farmer’s market. I went ahead and bought the big guns… Yellowfin Tuna. Seared it up to perfection, put it on a plate and thought… there is no way, no how, that Carter is going to take more than one bite of this lovely tuna steak. Quickly I grabbed some small cherry tomatoes, coconut milk, coconut butter, parsley, garlic. Oh, salt and pepper. That should do it, and boy did it ever! I even got a “Damn, Boots, this is good” with a fist pump to follow.

 

Secret Tuna Sauce
10 cherry tomatoes
1 large clove of garlic
1/2 cup to 1 cup of coconut milk
1 tbls of coconut butter
1/2 tbls of parsley
1 tbls of grapeseed oil
Salt and pepper to taste

Mince the garlic and half the tomatoes, set aside. Heat the grapeseed oil in a pan over medium/low heat. Add the garlic once the oil is heated. Saute the garlic for just under a minute. Add the tomatoes, salt/pepper and parsley. Saute until the tomatoes have cooked down. Add 1/2 cup of coconut milk and butter – you may need to turn the heat down. Just barely let it come to a slow simmer and keep stirring. Let the sauce thicken a bit – if it thickens too much add a little more of the coconut milk. This takes about 10 minutes tops to cook. Top your fish and serve!
