Chipotle rub

Good on flank steak and crock pot roasts

In a small bowl add the following ingredients and whisk:

Chipotle powder
2 cloves of freshly grated garlic
1 teaspoon of sea salt
1 teaspoon of black pepper
1 teaspoon of cumin
Juice from half of a lime

Put cut of meat in a Ziploc bag or Tupperware – add the paste on the top and rub in with your fingers. Be sure to cover the whole thing. Place if fridge until ready to cook. This can be done 1 hour or 1 day in advance. For the crock pot, place the meat in the crock pot, add paste, rub and set timer for 4-6 hours depending on size of roast.  Be sure you are able to baste the cut of meat during this time so it doesn’t get dry.
