Veggie Fritters

1 grated zucchini*

1 grated yellow squash*

½ cup chopped broccoli or broccoli slaw (trader joes)
1/2 c almond meal or flour
2 eggs
Grapeseed Oil

Form all ingredients into flat patties; do not include the grapeseed oil. Fry each patty in a non-stick skillet in the grapeseed oil until golden brown. Watch them because they will burn quickly. Takes about 5-8 minutes.

*squeeze juice out, very important or your fritters will fall apart. I separate in to small handfuls and use cheese cloth. It seems to get the most juice out
