Acorn Squash Paleo Oatmeal

Preheat oven to 395 degrees

1 acorn squash cut into quarters placed on a single sheet of aluminum foil. Drizzle with grapeseed oil and a little bit of sea salt across each slice. Flip over so that meat side is down.

Cook for about 30 minutes – and flip so that the opposite side of the meat is now touching the aluminum. You are not flipping so that the meat is face up – just ensuring that the meat is cooking evenly. Cook for an additional 20 minutes or until the inside meat is soft enough to scoop out with a spoon. I use a convection oven so you may have to play with the timing – at a convection 395 degrees I cooked the squash for about 20 minutes and then for an additional 15 minutes. So the first time cooking, just keep an eye on it for doneness.

Scoop out the inside in to a bowl and mix in the following ingredients:

1 teaspoon of cinnamon
1/2 teaspoon of cumin
1/2 teaspoon of organic all natural vanilla extract (check the label) or use vanilla bean
1 tablespoon of crunchy almond butter (i use trader joe’s)

Mix well and serve… YUMMY!!!
