Pesto Spaghetti Squash

Cut the squash in half, scoop out the seeds and place in oven at 350 degrees, split side down in baking dish. Cook for 25-30 minutes. Let squash sit for about 20 minutes before raking out the inside (should look like spaghetti noodles)

In a food processor add the following:
Bunch of basil
¼ cup –ish of pine nuts
Sea salt and pepper to taste
Pinch of red pepper
6 sun dried tomatoes
4 sprigs of garlic scape chopped
Add about a ¼ cup of olive oil or grapeseed oil

Place spaghetti squash in a bowl and toss with pesto. Enjoy!
