My momma’s peppers, Paleo-fied

4 red peppers or mixed bell peppers
1 lb Ground beef
1 zucchini diced
1 squash diced
1 14 oz can of whole peeled tomatoes – chopped
1 teaspoon of chili powder
3 cloves of chopped garlic
1 teaspoon of cumin
¼ head of RAW cauliflower – put in food processor until the consistency of a rice grain
Salt and pepper to taste
Red pepper to taste
Grapeseed oil on hand

Directions:

Drizzle about a tablespoon of grapeseed oil in sauté pan, add chopped garlic – add ground meat and brown. Add tomatoes and bring to a simmer. Add zucchini and squash. Add spices. Let simmer for about 30-45 minutes on low. Salt the inside the pepper cups and place in a pyrex dish. Once the meat sauce has simmered and is ready to put in the cups – add the raw cauliflower (rice substitute) and stir. Scoop out mixture into pepper cups. Fill until heaping. Place in 375o oven for about 25 minutes or until peppers start to cook.

Serve with a salad.
